We’ve all been there. The pots are piling up in the sink and you barely have anything to cook with. No problem; you can still make a quick and nutritious meal.
This is one of our favorite healthy dinners because it’s so low-effort. It’s piled high with broccoli, mushrooms, and asparagus (though you could get creative).
It comes together in about 20 minutes and that includes the time that it takes to chop up all of your veggies. Wanna try it?
Quick Chicken and Kale Soup
If you’re craving meat, we still have a recipe for you. Soup season might be almost over, but there’s always something comforting about a warm bowl of chicken soup. If you add a few noodles, even the pickiest eaters in your household might pretend not to notice the kale.
The entire soup comes together in about a half-hour. If you’re vegetarian, you can swap the chicken for garbanzo beans and use veggie broth instead of chicken broth.
Quick and Easy Fajitas
This is one of our favorite quick and healthy meal ideas that also won’t break the bank. Make next Friday a fajita Friday.
Fajitas are fantastic because, like with fried rice, you can add anything you want. If you’re a vegetarian, use beans instead of meat. If you want to add extra veggies, consider some corn or even broccoli.
Serve your fajitas with a side of warm corn or flour tortillas and you’ll still have them on the table in a half-hour or less.
